Tuscan Chicken Soup

Written by COA Nutrition Team On June 21, 2024

Tuscan Chicken Soup is based off the viral Marry Me Chicken recipe. It’s a soup full of garlic, parmesan, sun dried tomatoes, chicken and pasta.

INGREDIENTS

  • 1/2 cup sun dried tomatoes packed in olive oil with Italian herbs – julienned or chopped
  • 1 Tbsp of the seasoned olive oil from the sundried tomatoes jar
  • 1 Tbsp olive oil
  • 1 cup chopped yellow onion
  • 2 Tbsp tomato paste
  • 2 garlic cloves – minced
  • 6 cups chicken broth
  • 2 cups whole milk
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 cups pulled rotisserie chicken meat
  • 2 cups chopped spinach
  • 8 oz. small bite-size pasta – like macaroni, shells, etc.
  • 1/2 cup grated Parmesan cheese

DIRECTIONS

  1. Use a fork to pull ½ cup of the sundried tomatoes out of the jar. Set aside.
  2. Pour 1 tablespoon of the seasoned olive oil out of the sundried tomato jar. Add the seasoned oil to a large soup pot over medium-high heat.
  3. Add the regular olive oil and onion to the pot.
  4. Cook, stirring occasionally, for 5 minutes.
  5. Add the sundried tomatoes, tomato paste, and minced garlic.
  6. Cook, stirring often, for two minutes.
  7. Add the broth, milk, Italian seasoning, garlic powder, salt, and pepper. Stir well. Bring the liquid to a simmer.
  8. Add the rotisserie chicken, spinach, and pasta. Simmer until the pasta is tender (around 10 minutes).
  9. Add the Parmesan cheese. Stir until incorporated.

Yes, you should get an air fryer!

There are a lot of questions popping out when it comes to this latest kitchen craze. Is it worth buying an air fryer? Here are some reasons why we think so: • Easy to clean • Easy to use • Safe to use • Healthier meals • Doesn’t take up much space • Faster Than Oven Cooking An air fryer is an incredibly easy way to cook just about anything. You place the food in a fryer-style basket and hot air rapidly circulates all around the food, making the food crisp – much like deep-frying, but without the oil. You can cook anything you’d make in the oven. So, yes, DO IT!
