Easy White Turkey Chili

Got leftover turkey and need a kid-friendly recipe? Try this easy turkey chili! Most of the ingredients are pantry staples, and you can make it as mild or spicy as your family likes. It’s delicious on its own or with Pumpkin Bread or Corn Muffins!

INGREDIENTS

  • 1 cup diced onion
  • 1 cup diced celery
  • 6 garlic cloves (minced; or 4 tablespoons jarred minced garlic)
  • 4 14.5-ounce cans white or pinto beans (drained and rinsed)
  • 2 cups diced turkey (fully cooked)
  • 6 cups reduced-sodium broth (turkey or chicken)
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt (or more to taste)
  • 1 cup corn (frozen or canned, drained of the liquid)
  • 8 -ounce can mild green chiles
  • Shredded cheese, sour cream, cilantro, avocado, crushed tortilla chips, lime juice (optional to top)

DIRECTIONS

  1. Add the oil to a large pot and heat over medium heat. Add the onion, celery, and garlic. Stir and cook just until it starts to soften, or about 4 minutes.
  2. Add the beans, turkey, broth, spices, and salt, and stir. Bring to a simmer and cook for 20-30 minutes or until the vegetables are totally soft. (It can simmer for a while without issue and this allows the flavors to combine nicely.)
  3. Stir in the corn and chiles. Taste and adjust the salt if needed.
  4. If you want to make it creamy: stir in about ½ cup sour cream to the soup. That is optional.
  5. Serve warm with optional toppings.
