Cheesy Hasselback Chicken

Written by COA Nutrition Team On July 8, 2022

You can’t beat a dinner that looks fancy but only uses a few ingredients. This Hasselback chicken definitely fits the bill! You can have stuffed chicken ready for the oven in only about 20 minutes.

INGREDIENTS

  • 4 thick boneless, skinless chicken breasts
  • 4-6 oz. deli-sliced ham cut into strips about 1″ by 2″
  • 6 slices cheese cut into strips about 1″ by 2″ (Colby jack, pepper jack, cheddar, provolone, etc.)
  • 1 cup of steamed spinach.
  • Salt and black pepper to taste

DIRECTIONS

  1. Preheat oven to 350°F.
  2. Slice slits about 1″ apart in chicken breasts almost all the way through, leaving the bottom surface connected. Slide a small bunch of the spinach and strips of ham and cheese into each slit.
  3. Sprinkle chicken liberally with seasoned salt and pepper to taste. Top each piece of chicken with some more cheese. Place on a baking sheet or casserole dish sprayed with cooking spray.
  4. Bake in preheated oven for 20 minutes, or until chicken is cooked through and the cheese is golden. Serve warm over buttery noodles or mashes potatoes.

Planning Ahead Tip of the Month

Yes, you should get an air fryer!

There are a lot of questions popping out when it comes to this latest kitchen craze. Is it worth buying an air fryer? Here are some reasons why we think so: • Easy to clean • Easy to use • Safe to use • Healthier meals • Doesn’t take up much space • Faster Than Oven Cooking An air fryer is an incredibly easy way to cook just about anything. You place the food in a fryer-style basket and hot air rapidly circulates all around the food, making the food crisp – much like deep-frying, but without the oil. You can cook anything you’d make in the oven. So, yes, DO IT!
