Cheesy Chicken Meatballs

Very simple flavors, these Chicken Meatballs are great as they present chicken in a way to kids that they might find more appealing.

INGREDIENTS

  • 1 lb. skinless and boneless chicken breasts
  • 1 egg
  • 8 oz dried breadcrumbs
  • 5 oz grated cheddar cheese
  • 1 tbsp powder garlic
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • Fresh ground pepper to taste (optional)

DIRECTIONS

  1. Preheat the oven to 365°F and line one large or two medium baking trays with parchment paper.
  2. Add the chicken to a food processor and blend for a few seconds until it has minced.
  3. Add the egg, breadcrumbs, seasoning and grated cheese and blend again.
  4. Take a tablespoon of the mixture and roll it into a ball and place on the baking trays.
  5. Repeat with the rest of the mixture. You should be able to make 25 – 30 meatballs.
  6. Bake in the oven for 17 minutes then serve.
  7. Leftovers will keep in the fridge for 2 days and can be eaten cold or reheated.
  8. They can also be frozen for up to 2 months. Defrost in the fridge overnight.
