Apple Cinnamon Oatmeal Bread

Mornings can be hectic, but this Apple Cinnamon Oatmeal Bread makes breakfast feel cozy and effortless. Lightly sweet with tender apple chunks and hearty oats, it bakes up into a comforting loaf that’s both wholesome and delicious—perfect for fueling little ones (and parents!) before a busy day.

INGREDIENTS

  • 1 cup quick cooking rolled oats
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 baking powder
  • 1/2 baking soda
  • 1/2 salt
  • 1 ground cinnamon
  • 1 1/4 cups skim milk or whatever milk you like
  • ½ cup apple sauce
  • 2 vanilla extract
  • 2 large eggs
  • 2 tbsp. avocado oil (or your preferred cooking oil)
  • 2 medium apples peeled and diced

DIRECTIONS

  1. Preheat oven to 350° F. Spray a 9×5 inch loaf pan with cooking spray and set aside.
  2. In a large bowl, add the oats, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix until well combined.
  3. In a medium bowl, add the milk, apple sauce, vanilla, eggs and oil. Whisk until well combined.
  4. Add the wet ingredients and the apples to the dry ingredients. Stir until just combined and all of the flour is moistened. Do not over mix.
  5. Pour the batter into the prepared loaf pan. Bake for 55-65 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs, but no raw batter. Cool for 10 minutes in the pan. Then, remove the bread from the pan and place it on a wire rack to cool completely.
