Kid Friendly Caesar Salad

This simple homemade Caesar salad dressing is made without anchovies and has no raw eggs, so it’s kid-friendly and picky-eater approved!

INGREDIENTS

  • 2 tablespoons olive oil
  • 1 cup plain Greek yogurt
  • 1/3 cup fresh lemon juice about 2 lemons
  • 2 tablespoons Dijon mustard
  • 2 cloves garlic
  • 2 cooked egg yolks
  • 1 teaspoon Worcestershire sauce
  • 1/3 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper

DIRECTIONS

  1. Add all ingredients to blender or food processor.
  2. Blend for about 10 seconds until smooth. Taste for seasoning.
  3. Store in glass or plastic container.
  4. Chill for 30 minutes before serving.
