Very Berry Ice Cream (Vegan)

Written by COA Nutrition Team On April 11, 2018

With only a few ingredients make this delicious vegan dairy-free ice cream made from mostly fruit and naturally sweetened!

INGREDIENTS

  • 6 ounces fresh raspberries and strawberries
  • 14-ounce can full fat coconut milk or coconut cream
  • 3 tablespoons honey
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. Puree the berries in a small food processor. Push the puree through a strainer leaving just the seeds behind.
  2. Whisk the berry puree into the coconut milk, and add the honey and vanilla.
  3. Process the mixture in your ice cream machine according to its directions.
  4. Serve the ice cream immediately or put it into a container and freeze until firm. It is best eaten the same day. If it gets to hard in the freezer leave it out on the counter for a few minutes to soften.

“Have a few “Sheet Pan” go-to dinner recipes”

We have all experienced those busy nights when dinner has to happen in 30 minutes or less with minimal dishes or its just going to be a cereal for dinner kind of night. Weeknight dinners should be something that isn’t complicated, but can still be balanced and filling. Sheet pan dinners provide a way to give your family exactly that!

When you eat at home, you are guaranteed to have more veggies and overall nutrition in your dinner. If you haven’t made a sheet pan dinner yet, try one this week!
